We are Chef Educators with a passion for food and teaching. We strive to share our knowledge and passion about food with the next generation. Our goal is to help your child expand their culinary pallet and become self-sufficient in the kitchen; all while helping them build a safe and healthy lifestyle. Your child will be immersed in the sights, smells and sounds with learning about food and nutrition. This is a safe environment so they will not be handling knives or working directly with heat, that is left to our professional chefs. Has always loved to cook! Ever since she was a little girl she was creating food dishes with her grandmother. When she left for college she decided to follow a teacher’s guidance and enrolled as a chemistry student but always felt that she was missing something. During a family intervention she realized her true love and switched majors and universities to follow her passion. With her family's support she enrolled at the famed Culinary Institute of America (CIA) where she graduated with a degree in Culinary Arts and the rest is history.
Her career has spanned many decades and many notable restaurants, resorts and companies. Most recently she was Director of Bakery Operations for 4 Rivers Smokehouse, The Coop and Central Bakery. She was responsible for all daily operations, product development, the cake program, centralization, concept vision and implementation in all 15 4R locations with over 100 employees in the Sweet Shop company wide.
She was also the Department Chair of Le Cordon Bleu College of Culinary Arts, Orlando becoming the first female to hold a lead department position at the college. Also, she is currently an Adjunct Professor for Valencia College.
She is the previous owner of the American Brownie Co. Inc. which she opened in 2003 and was prominently featured on the Food Network show Unwrapped. American Brownie Co. was sold in 2012 and at that time it had over 175 specialty flavors of gourmet Brownies and Blondies which were sold via the company’s web site, multiple food distributors, supermarkets, mail order magazine companies and with QVC Shopping Channel and QVC.com.
Prior to starting American Brownie Co, Chef Zelen was opening Pastry Chef at Disney’s famed California Grill, at the Contemporary Resort, where she spent 9 years before accepting the position of Resort Pastry Chef at Disney’s Polynesian Resort. Not only did she help promote and create the trendy concept of “on stage” cooking at the California Grill she also was a new concept chef for Disney creating and designing new resort restaurants throughout the Walt Disney World complex.
Before, her tenure at Disney Chef Zelen worked at the Boca Raton Resort and Club in Boca Raton Florida, The Greenbrier Hotel in White Sulphur Springs, West Virginia, the Mayfair Regent in Chicago, Illinois and the San Ysidro Ranch in Montecito, California.
Chef Zelen has had the honor to be a chef at the world renowned James Beard House in New York City, she was also honored as a Chef de Chaine (only 2000 worldwide) with the exclusive Chaine des Rotisseurs (the oldest worldwide foodies organization from 1248 AD), her deserts were served on British Airways' Concorde and she has spent countless hours working on charity events centered around fine dining like the United Way Chef’s Gala.
Her work has received numerous accolades in many national and local publications including articles in Redbook, McCall’s, Woman’s Day, New York Times, Misé En Place, National Culinary Review, Restaurant Forum, USA Today, Orlando Sentinel, Orlando Weekly, Orlando Leisure, Orlando Magazine, Food Arts, Esquire, Disney Magazine, St. Petersburg Times, and the Palm Beach Post plus many more. She has also appeared on NBC, IVillage Live, Chewing the Fat, and numerous other radio talk shows, as well as, reoccurring appearances on QVC and America’s Health Network. Her creations have been featured on the Food Network, Travel Channel, A&E, Disney Channel, Oprah, Discovery Channel and the Daily Buzz.
